Course Description:
The course will explore different aspects of food tourism from a supply and a demand-side perspective. Using a multi- and inter-disciplinary approach, students will assess the phenomenon of food tourism according to theories and methodologies from a supply side perspective linked to destination development and environmental, social and economic impacts. From a demand side perspective students will address target markets, tourist motivations, lifestyles, cultural experiences, and consumption in a context of hospitality. Students will gain an understanding of the definition of food tourism in Tuscany through a review of historical origins, current trends and theories in a context of their visit. They will engage in onsite visits to evaluate food and wine experiences in Italy. Students will also gain an understanding of why food tourism is growing globally and its importance to destinations.

What is included:
